Củ cải bạn nên mua loại củ to có màu trắng đều sau đó đem rửa sạch rồi bào sạch vỏ. Sau đó bào củ cải thành những lát mỏng và dài.
Cho củ cải vào tô sau đó đổ nước vôi trong vào ngập củ cải, ngâm khoảng 3 tiếng thì vớt ra rửa lại thật sạch cho hết mùi vôi, để cho ráo nước.
Đổ nước vào nồi đun sôi thì cho 1 chút muối vào cùng, tiếp theo bạn cho củ cải bào sợi vào chần sơ qua để củ cải ra bớt mùi hăng. Chần khoảng 1 phút thì vớt ra rồi thả ngay vào chậu nước lạnh, để khoảng 10 phút thì vớt ra để cho ráo hết nước.
Cho củ cải vào tô cùng với 200g đường rồi trộn đều, ướp khoảng 2 tiếng cho đường tan hết và củ cải ngấm nước đường là có thể mang đi sên mứt. Đổ tất cả củ cải, nước đường, vani vào chảo, bật bếp đun cho nước đường sôi lên thì để lửa vừa. Thỉnh thoảng đảo đều và sên cho nước đường cạn bớt. Đảo nặng tay thì để lửa nhỏ nhất và đảo liên tục, gỡ cho các sợi mứt tơi ra và tiếp tục đảo để mứt khô ráo. Khi đường kết tinh bám trên mứt thì tắt bếp nhưng vẫn đảo thêm vài phút nữa cho mứt khô ráo hoàn toàn mới thôi, như vậy mứt mới không bị chảy nước.
