Sả rửa sạch, tước bỏ bớt cọng, dùng dao cắt đôi hoặc có thể chẻ giữa nếu cọng sả to. Thịt heo bằm cho ra tô sạch ướp thêm hành khô băm, hành lá thái nhỏ, 1 muỗng canh hào, 1/2 muỗng cà phê muối, 2 muỗng cà phê nước mắm, 1/3 muỗng cà phê tiêu và sả băm khoảng 30 phút để thịt ngấm gia vị. Sau khi thịt đã ngấm gia vị lấy ra dùng muỗng múc một ít thịt cho vào giữa từng cây sả và quấn đều phía ngoài cây sả cho tới khi hết phần thịt đã chuẩn bị.
Đun nóng dầu ăn ở chảo, cho từng cây sả đã quấn thịt vào chảo, để lửa nhỏ để thịt chín vào bên trong, thỉnh thoảng trở đều để thịt vàng đều từ hai phía. Chả chiên sau khi vàng, lấy ra dùng nóng với tương ớt ăn với cơm hoặc bún cuộn với rau xà lách.
