Cần tây, cà rốt, hành lá, gừng làm sạch. Cần tây thái sợi dài, cà rốt bào sợi. Gừng thái lát rồi thái sợi chỉ. Hành lá cắt khúc, tước đôi. Thịt bò rửa sạch, thái sợi dài. Ớt khô thái mỏng.
Bắc chảo chống dính lên bếp, cho dầu mè vào đun nóng trên lửa cao. Ngay lập tức cho thịt bò vào, xào cho đến khi thịt bò ra nước và săn lại. Bước này sẽ mất khoảng 2 – 3 phút. Lấy thịt bò ra khỏi chảo và để sang một bên.
Vặn lửa thấp, thêm dầu ăn vào chảo. Phi gừng cho thơm rồi cho sốt tương ớt vào. Đảo đều trong 1 phút cho đến khi dầu chuyển sang màu đỏ, điều chỉnh nhiệt khi cần để tránh làm dầu bị cháy. Sau đó cho cà rốt thái sợi vào.
Tiếp theo, thêm cần tây và thịt bò đã nấu chín. Bật lửa cao và dùng vá gỗ đảo đều trên chảo. Nhanh chóng cho rượu Thiệu Hưng, đường, nước tương, dầu mè, ớt khô và hành lá vào. Xào hỗn hợp trong vòng 1 phút cho đến khi các gia vị hòa quyện vào nhau. Nếm thử vừa miệng thì tắt bếp.
Bày thịt bò xào ra đĩa và thưởng thức cùng cơm trắng nhé. Thịt bò mềm mềm, cay cay kết hợp với cần tây, cà rốt thấm sốt đậm đà khiến bữa cơm cả nhà thêm phần thú vị, ấm cúng.
